Ingredients

  • 1.0 medium sweet potato, peeled and diced
  • 1.0 cup kale, stems removed and chopped
  • 6.0 large eggs
  • 0.25 cup milk (or non-dairy alternative)
  • 1.0 cup feta cheese, crumbled (or your choice of cheese)
  • 1.0 small onion, finely chopped
  • 2.0 cloves garlic, minced
  • 2.0 tablespoons olive oil
  • 0.0 to taste salt and pepper
  • 0.0 optional Fresh herbs (like parsley or chives) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potato and sauté for about 7-10 minutes, or until they’re tender. If you prefer a slightly crispy texture, you can brown them for an additional 2 minutes. Season with salt and pepper.
  3. Add the remaining 1 tablespoon of olive oil to the skillet. Stir in the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and kale, sautéing for an additional 2-3 minutes until the kale is wilted.
  4. In a medium bowl, whisk together the eggs, milk, and a pinch of salt and pepper.
  5. Once the veggies are ready, reduce the heat to low. Pour the egg mixture over the sweet potato and kale in the skillet. Add in the crumbled feta cheese, gently mixing to distribute evenly.
  6. Let the frittata cook on the stovetop for about 5 minutes until the edges begin to set.
  7. Carefully transfer the skillet to the preheated oven. Bake for another 15-20 minutes, or until the center is set and the top is slightly golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs, if desired, before slicing into wedges.
  9. This frittata can be stored in the fridge for up to 4 days.
