- 8 lasagna noodles
- 1 cup ricotta cheese
- 1 ½ cups grated mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach leaves
- 1 egg
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Begin by preheating your oven to 375°F (190°C).
- Boil water in a large pot. Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, and ½ cup of Parmesan cheese. Add the spinach, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a cooked lasagna noodle, place a generous spoonful of the filling along one edge, and roll it up tightly. Place the roll-up seam-side down in the baking dish. Repeat with remaining noodles and filling.
- Pour the remaining marinara sauce over the assembled roll-ups. Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Cover the baking dish with foil and place it in the preheated oven. Bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the oven and allow to cool for a few minutes before serving. Garnish with fresh basil if desired.
