  • 1 cup ricotta cheese
  • 1 ½ cups grated mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Begin by preheating your oven to 375°F (190°C).
  2. Boil water in a large pot. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, and ½ cup of Parmesan cheese. Add the spinach, egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish. Take a cooked lasagna noodle, place a generous spoonful of the filling along one edge, and roll it up tightly. Place the roll-up seam-side down in the baking dish. Repeat with remaining noodles and filling.
  5. Pour the remaining marinara sauce over the assembled roll-ups. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  6. Cover the baking dish with foil and place it in the preheated oven. Bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  7. Remove from the oven and allow to cool for a few minutes before serving. Garnish with fresh basil if desired.
