These Smash Burger Onion Jam Sliders are not just another burger recipe; they’re a flavor-packed experience! Perfectly portioned and irresistibly delicious, they are sure to impress at any gathering.


Ingredients

  • 1 lb 80/20 ground chuck beef
  • 12 brioche slider buns or potato rolls
  • 12 American cheese slices
  • 2 large sweet onions (Vidalia or Walla Walla, or regular yellow onions)
  • 4 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1/4 cup balsamic vinegar
  • 1/2 cup beef broth or water
  • Coarse sea salt to taste
  • Freshly cracked black pepper to taste
  • Optional special sauce (mayonnaise, ketchup, mustard, sugar, pickle relish or apple cider vinegar)

Instructions

  1. Slice the onions thinly.
  2. Melt 2 tablespoons of unsalted butter in a large pot over medium-low heat. Add the sliced onions and a pinch of salt. Cook for 15-20 minutes until soft and translucent.
  3. Add 2 tablespoons of brown sugar and 1/4 cup of balsamic vinegar to the pot. Stir well and cook on low heat for another 30-45 minutes, stirring every 5-10 minutes until deep golden-brown and jammy. If too dry, add a splash of water or beef broth. Season with salt and pepper to taste.
  4. Gently divide the ground beef into 1.5 to 2-ounce portions and roll into loose balls. Season generously with coarse sea salt and black pepper.
  5. Heat a cast-iron griddle or heavy skillet over high heat for 5-7 minutes. Optionally brush with neutral oil.
  6. Place a few beef balls on the hot griddle, cover with parchment paper, and smash each ball into a thin patty. Cook for 1.5-2 minutes until crispy edges form. Season the top side with salt and pepper, then flip the patty.
  7. Immediately place a slice of American cheese on each patty and cook for another 30-60 seconds until melted.
  8. While the last batch of burgers cooks, butter the cut sides of the slider buns and toast them face down on the griddle for 30 seconds to 1 minute until golden.
  9. Spread optional special sauce on the bottom half of each toasted bun, add a hot cheesy smash burger patty, top with a spoonful of onion jam, and crown with the top bun. Serve immediately!
