  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 (15 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 cup fideo noodles
  • 2 medium potatoes, peeled and diced

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic, chili powder, cumin, salt, and pepper, and cook for 1 minute more until fragrant.
  3. Stir in diced tomatoes (with their juice) and beef broth. Bring the mixture to a boil.
  4. Add the fideo noodles and diced potatoes to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the noodles are tender and the potatoes are cooked through, stirring occasionally.
  5. Taste and adjust seasonings if needed.
