  • 1 cup aged cheddar cheese (shredded)
  • 2 lbs russet potatoes (peeled and diced)
  • Salt and pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients and prepare garlic, potatoes, and chicken.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; sear for 5-7 minutes on each side until golden brown.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Pour in chicken broth and simmer for 10 minutes.
  4. Remove chicken temporarily. Whisk heavy cream into the broth mixture until thickened (3-5 minutes).
  5. Boil diced potatoes in salted water until tender (15-20 minutes). Drain and mash with butter and cheddar cheese until creamy.
  6. Return chicken to the skillet to absorb gravy for an additional 5 minutes on low heat.
  7. Serve with generous portions of cheesy mashed potatoes.
