- 4 cloves fresh garlic (minced)
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream

- 1 cup aged cheddar cheese (shredded)
- 2 lbs russet potatoes (peeled and diced)
- Salt and pepper (to taste)
- 2 tbsp olive oil
Instructions
- Gather all ingredients and prepare garlic, potatoes, and chicken.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; sear for 5-7 minutes on each side until golden brown.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Pour in chicken broth and simmer for 10 minutes.
- Remove chicken temporarily. Whisk heavy cream into the broth mixture until thickened (3-5 minutes).
- Boil diced potatoes in salted water until tender (15-20 minutes). Drain and mash with butter and cheddar cheese until creamy.
- Return chicken to the skillet to absorb gravy for an additional 5 minutes on low heat.
- Serve with generous portions of cheesy mashed potatoes.
