- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 ripe avocado, diced
- 4 cups mixed greens (arugula and spinach)
- 1 cup cucumber, diced
- 2 green onions, sliced
- ½ cup fresh basil leaves
- ½ cup fresh parsley leaves
- Juice of 1 lemon (about 2 tbsp)
- ¾ cup plain Greek yogurt
- 1 tbsp Dijon mustard
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill or skillet over medium heat. Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
- While the chicken rests, chop cucumber and green onions; prepare mixed greens.
- In a blender, combine Greek yogurt, basil, parsley, lemon juice, Dijon mustard, olive oil, salt, and pepper. Blend until smooth.
- In a large bowl, mix the sliced chicken with chopped veggies and mixed greens. Drizzle with Green Goddess dressing and toss gently.
- Allow salad to sit for about 10 minutes before serving at room temperature or chilled.
