Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes. Stir in minced garlic and cook for another minute until fragrant.
