Description

This creamy gnocchi chicken soup is a comforting dish that combines tender chicken, fluffy gnocchi, and fresh vegetables in a rich, velvety broth. It’s an easy-to-make meal perfect for any occasion.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 pound potato gnocchi
  • 2 cups fresh spinach, chopped
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth, then add dried thyme, dried rosemary, and black pepper. Bring the mixture to a simmer.
  4. Return the cooked chicken to the pot. Add the potato gnocchi and cook according to package directions, usually 2-3 minutes, until they float to the top.
  5. Stir in the heavy cream and chopped fresh spinach. Cook until the spinach wilts, about 1-2 minutes.
  6. Season with salt to taste. Serve your comforting creamy chicken gnocchi soup hot.

Notes

  • For a thicker creamy chicken and gnocchi soup, you can create a slurry with 1 tablespoon of cornstarch and 2 tablespoons of water, then stir it into the simmering soup.
  • To make a healthy creamy chicken gnocchi soup, use low-sodium chicken broth and reduce the amount of heavy cream, or substitute with milk.
  • This rich chicken gnocchi soup is excellent for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can easily adapt this homemade creamy chicken gnocchi soup with other vegetables like peas or corn.
