- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped sweet potato
- 1 cup chopped Brussels sprouts
- 0.5 cup chicken broth
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken pieces with olive oil, salt, pepper, paprika, and thyme.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add the chopped onion, carrots, celery, sweet potato, and Brussels sprouts to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Return the browned chicken to the skillet with the vegetables.
- Pour in the chicken broth. Bring to a simmer, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
