  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp salt

  • 1 tsp dried thyme
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped sweet potato
  • 1 cup chopped Brussels sprouts
  • 0.5 cup chicken broth
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken pieces with olive oil, salt, pepper, paprika, and thyme.
  3. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add the chopped onion, carrots, celery, sweet potato, and Brussels sprouts to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften.
  5. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Return the browned chicken to the skillet with the vegetables.
  7. Pour in the chicken broth. Bring to a simmer, then transfer the skillet to the preheated oven.
  8. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
