Ingredients

  • 1 cup tahini
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the tahini, brown sugar, egg, and vanilla extract. Mix until smooth and well combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, salt, cinnamon, ginger, cardamom, and cloves.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them a few inches apart.
  7. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are set but the centers remain soft.
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
