Description
A quick and spicy dinner featuring succulent ground chicken simmered in a rich, smoky, and flavorful Cajun sauce, served on toasted buns with an optional creamy cheese sauce.

- 1 tbsp olive oil
- 1 lb ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp tomato paste
- 1/2 cup low-sodium chicken broth
- 1/2 cup tomato sauce
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar (optional)
- Salt, to taste
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 8 oz shredded sharp cheddar or American cheese
- 6–8 hamburger buns, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook until browned, breaking it up. Drain any excess fat. Add finely chopped onion and cook until softened (5-7 minutes). Stir in minced garlic and cook for 30 seconds until fragrant.
- Stir in Cajun seasoning and tomato paste; cook for 1-2 minutes. Pour in chicken broth, tomato sauce, and Worcestershire sauce. Add brown sugar if desired, and season with salt to taste.
- Bring mixture to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until sauce thickens.
- In a separate small saucepan, melt unsalted butter over medium heat. Whisk in all-purpose flour and cook for 1 minute. Gradually whisk in whole milk until smooth and thickened. Remove from heat and stir in shredded sharp cheddar or American cheese until melted and smooth.
- Serve the hot Cajun chicken filling generously spooned onto toasted hamburger buns. Top with warm cheese sauce, if desired, and any other favorite garnishes.
