Description

A quick and spicy dinner featuring succulent ground chicken simmered in a rich, smoky, and flavorful Cajun sauce, served on toasted buns with an optional creamy cheese sauce.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp tomato paste
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar (optional)
  • Salt, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz shredded sharp cheddar or American cheese
  • 68 hamburger buns, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken and cook until browned, breaking it up. Drain any excess fat. Add finely chopped onion and cook until softened (5-7 minutes). Stir in minced garlic and cook for 30 seconds until fragrant.
  2. Stir in Cajun seasoning and tomato paste; cook for 1-2 minutes. Pour in chicken broth, tomato sauce, and Worcestershire sauce. Add brown sugar if desired, and season with salt to taste.
  3. Bring mixture to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until sauce thickens.
  4. In a separate small saucepan, melt unsalted butter over medium heat. Whisk in all-purpose flour and cook for 1 minute. Gradually whisk in whole milk until smooth and thickened. Remove from heat and stir in shredded sharp cheddar or American cheese until melted and smooth.
  5. Serve the hot Cajun chicken filling generously spooned onto toasted hamburger buns. Top with warm cheese sauce, if desired, and any other favorite garnishes.
