- ½ cup (100g) granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup (113g) unsalted butter, very cold, ½-inch cubes
- 1 large egg, lightly beaten
- ¾ cup (180ml) whole milk, cold
- 1 teaspoon pure vanilla extract
- 2 medium apples (300g), peeled, cored, finely diced
- ¼ cup (50g) granulated sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon unsalted butter, melted
- 1 teaspoon fresh lemon juice
- Pinch of nutmeg (optional)
- 1 cup (120g) powdered sugar
- 2–3 tablespoons whole milk or heavy cream
- ½ teaspoon pure vanilla extract
Instructions
- Grease a 9×5-inch loaf pan and line with greased parchment paper.
- In a large bowl, whisk together flour, ½ cup sugar, baking powder, and salt.
- Add cold butter cubes to dry ingredients. Cut in until mixture resembles coarse crumbs with pea-sized butter pieces.
- In a separate bowl, whisk beaten egg, cold milk, and 1 teaspoon vanilla extract.
- Pour wet ingredients into dry mixture. Fold gently with a spatula until just combined (do not overmix).
- Turn dough onto a floured surface. Knead gently 8-10 times until it forms a cohesive ball. Form into a disk, wrap, and chill for 15-20 minutes.
- Peel, core, and finely dice apples (¼ to ½-inch pieces).
- In a medium bowl, combine diced apples, ¼ cup sugar, cinnamon, melted butter, lemon juice, and optional nutmeg. Stir well.
- Preheat oven to 375°F (190°C). On a lightly floured surface, roll chilled dough into a 16×10-inch rectangle.
- Evenly spread apple cinnamon filling over dough, leaving a ½-inch border on one long edge.
- Tightly roll dough from the opposite long edge into a log. Pinch seam closed and tuck in ends.
- Carefully transfer the log, seam-side down, into the prepared loaf pan. Bake for 45-55 minutes, or until deeply golden and a skewer inserted comes out clean (internal temp 200-210°F). Tent with foil if needed.
- Cool in the pan for 10-15 minutes, then lift out using parchment and cool completely on a wire rack.
- Whisk powdered sugar, 2-3 tablespoons milk/cream, and ½ teaspoon vanilla extract until smooth and pourable.
- Drizzle glaze over the completely cooled loaf. Let set for 10-15 minutes before slicing.
