Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels and season with salt and pepper.
- In a bowl, combine Panko breadcrumbs, grated Pecorino Romano cheese, lemon zest, and chopped parsley. Mix well.
- In another bowl, beat two eggs and add a splash of lemon juice. Dip each chicken piece into the egg mixture, then press into the breadcrumb mixture to coat.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Place the coated chicken pieces skin-side down in the skillet.
- Cook for 5-7 minutes until golden brown and crispy. Flip and cook for another 5 minutes.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C) internally and the coating is crispy.
- Remove from the oven and let the chicken rest for a few minutes. Garnish with lemon zest and parsley before serving.
