Description

Zesty Lemon Pecorino Crispy Chicken is a flavorful dish that combines juicy chicken with a crispy lemon and cheese coating. Perfect for impressing guests or a family dinner.

Ingredients

Scale
  • Bone-in, skin-on chicken thighs (or chicken breasts)
  • Pecorino Romano cheese (or Parmigiano-Reggiano as a substitute)
  • Freshly squeezed lemon juice
  • Lemon zest
  • Panko breadcrumbs (or regular breadcrumbs)
  • Fresh parsley (or dried herbs like oregano or thyme)
  • Extra virgin olive oil (or vegetable oil)
  • Salt
  • Pepper
  • 2 eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels and season with salt and pepper.
  2. In a bowl, combine Panko breadcrumbs, grated Pecorino Romano cheese, lemon zest, and chopped parsley. Mix well.
  3. In another bowl, beat two eggs and add a splash of lemon juice. Dip each chicken piece into the egg mixture, then press into the breadcrumb mixture to coat.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Place the coated chicken pieces skin-side down in the skillet.
  5. Cook for 5-7 minutes until golden brown and crispy. Flip and cook for another 5 minutes.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C) internally and the coating is crispy.
  7. Remove from the oven and let the chicken rest for a few minutes. Garnish with lemon zest and parsley before serving.

Notes

  • Use fresh ingredients for the best flavor.
  • Adjust seasoning to your taste.
  • Let the chicken rest for juiciness.
