Delicious Teriyaki Beef & Pepper Rice Bowl with Sesame Seeds


Ingredients

  • Flank steak, sirloin steak, or top round beef (thinly sliced against the grain)
  • Red bell pepper (sliced into thin strips)
  • Yellow bell pepper (sliced into thin strips)
  • Green bell pepper (sliced into thin strips)
  • Orange bell pepper (sliced into thin strips)
  • Jasmine rice or medium-grain sushi rice
  • Teriyaki sauce (store-bought or homemade)
  • Toasted sesame seeds
  • Fresh ginger (minced)
  • Garlic (minced)
  • Cooking oil (vegetable oil, canola oil, or avocado oil)
  • Sliced green onions (optional)
  • Chili flakes (optional)

Instructions

  1. Prepare Your Ingredients: Cook your rice according to package directions. While the rice is cooking, thinly slice your beef against the grain into bite-sized strips. Slice your bell peppers into similar-sized strips. Mince your garlic and grate your ginger. If you’re making homemade teriyaki sauce, whisk all those ingredients together (soy sauce, brown sugar, ginger, garlic, non-alcoholic mirin substitute, and cornstarch slurry if using).
  2. Sear the Beef: Heat a large skillet or wok over medium-high heat with a tablespoon of cooking oil. Once the oil is shimmering and hot, add your beef in a single layer. Cook for just 1-2 minutes per side until beautifully browned. Remove the seared beef from the pan and set it aside.
  3. Sauté the Peppers and Aromatics: Add another tablespoon of oil to the same pan if needed. Toss in your sliced bell peppers and stir-fry for 3-5 minutes until they are tender-crisp. Add the minced garlic and grated ginger to the pan and cook for another minute until fragrant.
  4. Combine and Sauce: Return the seared beef to the pan with the peppers, garlic, and ginger. Pour in your teriyaki sauce and bring it to a gentle simmer, stirring constantly, and cook for 2-4 minutes until the sauce thickens and coats the beef and peppers beautifully.
  5. Assemble Your Bowl: Once the sauce is thick and glossy, remove the pan from the heat. Spoon a generous portion of hot, fluffy rice into individual bowls and top each with a hearty serving of the teriyaki beef and pepper mixture.
