  • 16 large mushrooms, stems removed
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 cup cream cheese, softened
  • 2 cloves garlic, minced
  • ¼ cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Gently remove the stems from the mushrooms and set caps aside. Finely chop the stems.
  3. In a skillet over medium heat, add a splash of olive oil. Sauté the chopped mushroom stems and garlic until softened (about 4-5 minutes).
  4. In a large mixing bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, cream cheese, parsley, Italian seasoning, salt, and pepper. Mix until fully incorporated.
  5. Spoon the filling generously into each mushroom cap. Press down slightly to ensure they are well filled.
  6. Place filled mushroom caps on the prepared baking sheet in a single layer. Drizzle with a little olive oil for extra flavor.
  7. Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the mushrooms are tender and the filling is golden brown.
  8. Remove from the oven and allow to cool slightly before serving warm. Garnish with extra parsley for a pop of color.
