- 16 large mushrooms, stems removed
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 cup cream cheese, softened
- 2 cloves garlic, minced
- ¼ cup chopped fresh parsley
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Gently remove the stems from the mushrooms and set caps aside. Finely chop the stems.
- In a skillet over medium heat, add a splash of olive oil. Sauté the chopped mushroom stems and garlic until softened (about 4-5 minutes).
- In a large mixing bowl, combine the sautéed mixture with breadcrumbs, Parmesan cheese, cream cheese, parsley, Italian seasoning, salt, and pepper. Mix until fully incorporated.
- Spoon the filling generously into each mushroom cap. Press down slightly to ensure they are well filled.
- Place filled mushroom caps on the prepared baking sheet in a single layer. Drizzle with a little olive oil for extra flavor.
- Place the baking sheet in the preheated oven and bake for 25-30 minutes or until the mushrooms are tender and the filling is golden brown.
- Remove from the oven and allow to cool slightly before serving warm. Garnish with extra parsley for a pop of color.
