- 1 medium butternut squash
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice the butternut squash in half lengthwise and scoop out seeds. Drizzle with olive oil, season with salt and pepper.
- Place squash cut side down on a parchment-lined baking sheet; roast for 25-30 minutes until tender.
- In a skillet, heat olive oil over medium heat; sauté garlic until fragrant (about 1 minute). Add spinach; cook until wilted (2-3 minutes).
- In a bowl, mix sautéed spinach with ricotta cheese, half of the Parmesan, salt, and pepper.
- Flip roasted squash cut side up; fill each half generously with the spinach mixture and top with remaining Parmesan.
- Return to the oven for another 10-15 minutes until heated through.
