- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 onion, chopped

- 4 cups chicken broth

- 8 ounces cream cheese, softened
- 1/2 cup milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 4–6 jalapenos, seeded and minced (adjust to your spice preference)
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste

Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken cubes and cook until browned on all sides. Remove chicken from the pot and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and cream of chicken soup. Bring to a simmer, stirring occasionally.
- Reduce heat to low. Add softened cream cheese, milk, cheddar cheese, and Monterey Jack cheese. Stir until cheeses are melted and the soup is smooth and creamy.
- Return the cooked chicken to the pot. Stir in minced jalapenos and fresh cilantro.
