  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 8 ounces cream cheese, softened
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 46 jalapenos, seeded and minced (adjust to your spice preference)
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken cubes and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth and cream of chicken soup. Bring to a simmer, stirring occasionally.
