- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 2 tsp Cajun seasoning
- 8 oz cream cheese
- 4 cups low-sodium chicken broth
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup diced bell peppers (red or yellow)
- 1 medium onion, diced
- 1 cup corn (fresh or frozen)
- Juice of 1 lime
Instructions
- In a large pot over medium heat, add a splash of oil and sear the chicken until golden brown on both sides (about 5-6 minutes per side). Remove the chicken and set aside.
- In the same pot, sauté the diced onion and minced garlic until fragrant (about 3 minutes).
- Add the diced bell peppers, corn, and Cajun seasoning; cook until tender (about 5 minutes).
- Pour in the chicken broth and return the seared chicken to the pot. Simmer for about 15 minutes.
- Remove the chicken to shred it; stir in cream cheese until melted before adding the shredded chicken back into the mix.
- Finally, add white beans and lime juice; warm through for about 5 minutes before serving.
