Description

Sizzling shrimp tacos with a creamy avocado lime sauce offer a vibrant and flavorful meal. This easy recipe is perfect for weeknight dinners or gatherings, combining seasoned shrimp, crunchy cabbage, and a zesty avocado sauce.

Ingredients

Scale
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage or coleslaw mix
  • 1/4 cup fresh cilantro, finely chopped
  • Lime wedges for serving
  • For the Avocado Lime Sauce:
  • 1 ripe avocado
  • 1/4 cup Greek yogurt or sour cream
  • Juice of 1 fresh lime
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Avocado Lime Sauce: In a blender or food processor, combine the ripe avocado, Greek yogurt (or sour cream), freshly squeezed lime juice, minced garlic, and a pinch of salt and pepper. Blend until the mixture is smooth and creamy. Taste and adjust the seasoning if necessary. Transfer to a bowl and set aside.
  2. Season the Shrimp: In a medium mixing bowl, add the peeled and deveined shrimp. Drizzle with olive oil and sprinkle in the chili powder, ground cumin, garlic powder, and a good pinch of salt and pepper. Toss well until all the shrimp are evenly coated in the spice mixture.
  3. Cook the Shrimp: Heat a large skillet over medium-high heat until hot. Add the seasoned shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp turn opaque and develop a beautiful pink color. Remove the skillet from the heat once cooked.
  4. Warm the Tortillas: In the same skillet (or a clean one if you prefer), warm the tortillas for about 30 seconds on each side until they are soft and pliable. This step enhances their flavor and texture.
  5. Assemble the Tacos: Take a warm tortilla and add a small handful of shredded cabbage or coleslaw mix in the center. Top with a generous portion of the cooked shrimp. Drizzle over the creamy avocado lime sauce and finish with a sprinkle of freshly chopped cilantro.
  6. Serve: Serve the tacos immediately with lime wedges on the side, perfect for squeezing over the top just before enjoying.

Notes

  • Serve the tacos on a colorful platter, garnished with extra cilantro.
  • Place the lime wedges in a small dish for easy access, adding a vibrant touch to the table.
