Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Scrub the sweet potatoes and slice them into uniform rounds, about 1/4 to 1/2 inch thick.
  3. In a large bowl, combine the sliced sweet potato rounds with a generous drizzle of olive oil, a good pinch of salt, and freshly ground black pepper. Toss to coat.
  4. Spread the seasoned sweet potato rounds in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  5. Roast in the preheated oven for about 20-30 minutes, flipping halfway through, until tender and caramelized.
  6. While the sweet potatoes are roasting, crumble the feta cheese into small, uneven pieces.
