- 2 tbsp fresh lemon juice

- 1 tbsp honey
- Salt and pepper to taste
- Fresh herbs (optional, such as parsley or mint)
Instructions
- Rinse the fennel bulb under cold water and pat dry. Remove tough outer layers, slice it thinly.
- Core the apples and slice them thinly, tossing in lemon juice to prevent browning.
- In a large bowl, combine sliced fennel and apples. Add olive oil, honey, salt, and pepper; toss gently until well-coated.
- If using fresh herbs, fold them in now for added flavor.
- Serve on a platter or in individual bowls, garnished with fennel fronds if desired.
