- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
- Set the Instant Pot to the ‘Sauté’ function and add olive oil. Once hot, brown the chicken pieces on all sides.
- Remove the chicken from the Instant Pot and set aside.
- Add the uncooked rice and chicken broth to the Instant Pot. Stir to combine.
- Return the chicken to the Instant Pot.
- Secure the lid and set the valve to the ‘Sealing’ position.
- Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 10 minutes.
- Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.
- Carefully open the lid. Stir in the milk and heavy cream.
- Stir until the sauce is creamy and heated through.
- Garnish with fresh parsley before serving your creamy chicken rice.
Notes
- You can use chicken thighs instead of breasts for a richer flavor.
- Add frozen peas or carrots during the last 5 minutes of cooking for added vegetables.
- Adjust seasonings to your preference.
- For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the pot during step 9.
