Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Season the chicken pieces with garlic powder, onion powder, salt, and pepper.
  2. Set the Instant Pot to the ‘Sauté’ function and add olive oil. Once hot, brown the chicken pieces on all sides.
  3. Remove the chicken from the Instant Pot and set aside.
  4. Add the uncooked rice and chicken broth to the Instant Pot. Stir to combine.
  5. Return the chicken to the Instant Pot.
  6. Secure the lid and set the valve to the ‘Sealing’ position.
  7. Select the ‘Manual’ or ‘Pressure Cook’ setting and cook on high pressure for 10 minutes.
  8. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then perform a quick release for any remaining pressure.
  9. Carefully open the lid. Stir in the milk and heavy cream.
  10. Stir until the sauce is creamy and heated through.
  11. Garnish with fresh parsley before serving your creamy chicken rice.

Notes

  • You can use chicken thighs instead of breasts for a richer flavor.
  • Add frozen peas or carrots during the last 5 minutes of cooking for added vegetables.
  • Adjust seasonings to your preference.
  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the pot during step 9.
