- 1 lb thinly sliced ribeye or sirloin steak
- 1 tablespoon olive oil
- 1 tablespoon olive oil (for sautéing)
- 1 yellow onion, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup marinara sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1 package (about 9 oz) fresh or frozen cheese tortellini
- 4 oz sliced provolone cheese
- Salt to taste
- Freshly ground black pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the thinly sliced beef in a single layer. Cook quickly for 1-2 minutes per side until browned. Remove the cooked beef and set aside.
- Reduce the heat to medium. Add another tablespoon of olive oil, onions, and bell peppers. Sauté for 5-7 minutes until softened. Stir in garlic and cook for another minute.
- Pour in the beef broth and scrape up any browned bits. Stir in the marinara sauce, Worcestershire sauce, and Italian seasoning. Bring to a simmer.
- Add the tortellini into the simmering sauce. Cover and simmer for 8-10 minutes, stirring occasionally.
- Once cooked, stir in the reserved beef. If using cream cheese, stir it in until melted. Adjust seasonings as needed.
- Arrange provolone cheese over the mixture. If oven-safe, broil for 2-3 minutes until bubbly. Alternatively, cover and heat on low for 3-5 minutes.
- Remove from heat. Garnish with parsley if desired. Serve directly from the pan.
