Ingredients

  • 1 lb thinly sliced ribeye or sirloin steak
  • 1 tablespoon olive oil
  • 1 tablespoon olive oil (for sautéing)
  • 1 yellow onion, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup marinara sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 package (about 9 oz) fresh or frozen cheese tortellini
  • 4 oz sliced provolone cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the thinly sliced beef in a single layer. Cook quickly for 1-2 minutes per side until browned. Remove the cooked beef and set aside.
  2. Reduce the heat to medium. Add another tablespoon of olive oil, onions, and bell peppers. Sauté for 5-7 minutes until softened. Stir in garlic and cook for another minute.
  3. Pour in the beef broth and scrape up any browned bits. Stir in the marinara sauce, Worcestershire sauce, and Italian seasoning. Bring to a simmer.
  4. Add the tortellini into the simmering sauce. Cover and simmer for 8-10 minutes, stirring occasionally.
  5. Once cooked, stir in the reserved beef. If using cream cheese, stir it in until melted. Adjust seasonings as needed.
  6. Arrange provolone cheese over the mixture. If oven-safe, broil for 2-3 minutes until bubbly. Alternatively, cover and heat on low for 3-5 minutes.
  7. Remove from heat. Garnish with parsley if desired. Serve directly from the pan.
