  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Make the Pumpkin Filling: In a medium bowl, whisk together the pumpkin puree, sweetened condensed milk, egg, cinnamon, nutmeg, ginger, cloves, salt, and vanilla extract until smooth.
  2. Roll Out the Dough: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter to cut out circles large enough to fit into your mini pie pan.
  3. Assemble the Pies: Carefully place the dough circles into the mini pie pan. Fill each crust with the pumpkin filling, leaving a little space at the top.
  4. Bake: Place the pan in the preheated oven and bake for 25–30 minutes or until the filling is set and the crust is golden brown.
  5. Cool the Pies: Remove the pies from the oven and allow them to cool in the pan for about 15 minutes. Then, transfer them to a wire rack to cool completely.
