Ingredients

  • 1 lb (450g) ground beef or pork
  • 1 small onion, finely chopped
  • 1/2 cup cabbage, finely shredded
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon soy sauce
  • 1 tablespoon sake (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • Cooking oil for frying
  • Tonkatsu sauce (for serving)

Instructions

  1. In a pan, heat a small amount of oil and sauté the chopped onion until translucent.
  2. In a large bowl, mix the ground meat, sautéed onion, shredded cabbage, egg, soy sauce, sake, salt, and pepper.
  3. Divide the mixture into equal portions, shaping each into a patty that’s about 1/2 inch thick.
  4. Dredge each patty lightly in flour, ensuring even coverage.
  5. Dip the floured patty into the beaten egg, allowing excess egg to drip off.
  6. Coat the patty in panko breadcrumbs, pressing gently to adhere.
  7. In a large frying pan, heat enough cooking oil over medium heat for frying (about 1/2 inch deep).
  8. Carefully place the patties into the hot oil, cooking each side for about 4-5 minutes or until golden brown.
  9. Once cooked, use a slotted spoon to transfer the patties to a plate lined with paper towels to drain excess oil.
  10. Allow the Menchi Katsu to cool for a few minutes before slicing for serving.
