  • 1 lb Italian sausage (sliced)
  • 2 medium bell peppers (assorted colors, sliced)
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese

Instructions

  2. Stir in sliced onions and bell peppers; sauté until softened, about 5–6 minutes.
  3. Add minced garlic and Italian seasoning; cook for an additional minute until fragrant.
  4. Boil gnocchi according to package instructions until they float (about 2–3 minutes). Drain well.
  5. Gently combine cooked gnocchi with the sausage and vegetable mixture in the skillet.
