- 1 medium onion (sliced)
- 3 cloves garlic (minced)
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5–7 minutes.
- Stir in sliced onions and bell peppers; sauté until softened, about 5–6 minutes.
- Add minced garlic and Italian seasoning; cook for an additional minute until fragrant.
- Boil gnocchi according to package instructions until they float (about 2–3 minutes). Drain well.
- Gently combine cooked gnocchi with the sausage and vegetable mixture in the skillet.
- Remove from heat and sprinkle grated Parmesan cheese on top before serving.
