- 2 tbsp (30ml) extra virgin olive oil

Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cube the sweet potatoes into bite-sized pieces.
- In a bowl, toss the sweet potato cubes with olive oil, salt, pepper, and chopped rosemary until well coated.
- Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and golden.
