Ingredients

  • 2 large sweet potatoes (about 800g)
  • 4 oz (113g) fresh goat cheese, crumbled
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 tsp fresh rosemary, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a bowl, toss the sweet potato cubes with olive oil, salt, pepper, and chopped rosemary until well coated.
  4. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and golden.
  5. Five minutes before they are done, sprinkle crumbled goat cheese over the hot sweet potatoes and return to the oven until melted.
  6. Serve warm, garnished with additional rosemary if desired.
