- 1 cup creamy or crunchy peanut butter
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped chocolate peanut butter cups
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in peanut butter and vanilla extract until smooth.
- In another bowl, whisk flour, baking soda, and salt together. Gradually add to the wet mixture until just combined.
- Fold in chopped chocolate peanut butter cups.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes until edges are golden but centers remain soft. Cool on the baking sheet for 5 minutes before transferring to wire racks.
Notes
- Store cookies in an airtight container for up to a week.
- For a richer flavor, use dark chocolate peanut butter cups.
