Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  3. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Stir in the chicken broth, heavy cream, lemon juice, and oregano. Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
  5. Add the asparagus to the skillet and cook until crisp-tender, about 3-5 minutes.
  6. Return the cooked chicken to the skillet and toss to coat in the garlic butter sauce.
