- 2 cups fresh apple cider
- 2 lbs beef chuck roast, cut into bite-sized pieces
- 4 medium carrots, sliced
- 3 medium Yukon Gold potatoes, diced
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- 2 tbsp extra virgin olive oil
- 2 bay leaves
Instructions
- Prepare ingredients by chopping beef, dicing onions, mincing garlic, and slicing carrots.
- In a large pot over medium heat, sauté onions and garlic in olive oil until translucent (about 3 minutes).
- Add beef chunks and brown on all sides (approximately 5 minutes).
- Stir in carrots, potatoes, thyme, rosemary, salt, pepper, and bay leaves; cook for another 2 minutes.
- Pour in the apple cider and bring to a boil. Reduce heat to low and simmer covered for about 2 hours until meat is tender.
- Serve hot with crusty bread or over rice.
