Description

These Cranberry Apple Twice-Baked Sweet Potatoes are a delightful combination of sweet and tart flavors. Fluffy sweet potato flesh mixes with cranberries and apples, topped with cinnamon. They are perfect for fall, holidays, or a cozy weeknight meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1 large apple, peeled, cored, and diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter, melted
  • 1/4 cup milk or cream
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes several times with a fork.
  2. Rub sweet potatoes with olive oil and place on a baking sheet. Bake for 45-60 minutes, or until very tender.
  3. Once cooled slightly, carefully slice each sweet potato in half lengthwise. Scoop out the flesh into a large bowl, leaving a thin shell.
  4. In the bowl with the sweet potato flesh, add cranberries, diced apple, brown sugar, cinnamon, nutmeg, melted butter, and milk or cream.
  5. Mash the mixture until smooth, or leave slightly chunky for texture. Season with salt and pepper.
  6. Spoon the cranberry apple sweet potato mixture back into the sweet potato skins.
  7. Return the twice-baked sweet potatoes to the baking sheet. Bake for another 15-20 minutes, or until heated through and slightly golden on top.
