Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix grated carrots, diced pineapple, flour, cinnamon, nutmeg, and brown sugar until combined.
- Spread the mixture onto a lined baking sheet and bake for 20-25 minutes or until golden brown.
- Let the baked mixture cool completely on a wire rack.
- In another bowl, beat together cream cheese and powdered sugar until smooth.
- Crumble the cooled carrot cake into small pieces in a large bowl, adding half of the frosting mixture to create a moldable dough.
- Roll small portions into balls and coat with remaining frosting or chopped nuts if desired.
