No-Bake Strawberry Cheesecake Bars are the ultimate summer dessert, offering a creamy cheesecake layer topped with fresh strawberries and a crunchy graham cracker crust.

- 1 ½ cups finely crushed graham crackers
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
Instructions
- Prepare an 8×8-inch baking dish by lining it with parchment paper.
- For the crust, mix crushed graham crackers and melted butter until crumbly. Press into the bottom of the pan and refrigerate.
- In a bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and mix well.
- In another bowl, whip heavy cream to soft peaks. Gently fold it into the cream cheese mixture.
- Spread half of the cheesecake mixture over the crust, then layer sliced strawberries on top before adding the remaining cheesecake mixture.
- Smooth out and cover with plastic wrap; refrigerate for at least four hours or overnight.
- Once set, lift out using parchment overhang, slice into bars, and enjoy!
