Description

No-Bake Strawberry Cheesecake Bars are the ultimate summer dessert, offering a creamy cheesecake layer topped with fresh strawberries and a crunchy graham cracker crust.


Ingredients

  • 1 ½ cups finely crushed graham crackers
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced

Instructions

  1. Prepare an 8×8-inch baking dish by lining it with parchment paper.
  2. For the crust, mix crushed graham crackers and melted butter until crumbly. Press into the bottom of the pan and refrigerate.
  3. In a bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract and mix well.
  4. In another bowl, whip heavy cream to soft peaks. Gently fold it into the cream cheese mixture.
  5. Spread half of the cheesecake mixture over the crust, then layer sliced strawberries on top before adding the remaining cheesecake mixture.
  6. Smooth out and cover with plastic wrap; refrigerate for at least four hours or overnight.
  7. Once set, lift out using parchment overhang, slice into bars, and enjoy!
