Instructions
- Preheat the oven to 400°F (200°C).
- Bake sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until fork-tender.
- While baking, melt butter in a skillet over medium heat. Add diced apples, brown sugar, and cinnamon; cook until apples soften.
- Stir in toasted nuts before removing from heat.
- Once sweet potatoes are baked, slice them open lengthwise and fluff the insides with a fork. Spoon in the apple mixture.
- Optionally, return stuffed sweet potatoes to the oven at 350°F (175°C) for an additional 10 minutes.
