Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, and sugar. Add cold butter and mix until crumbly. Gradually add ice water until dough holds together.
- Press dough evenly into a tart pan along the bottom and sides. Bake for 15 minutes until set but not browned. Let cool completely.
- For the ganache, warm heavy cream in a saucepan until steaming. Remove from heat and stir in chopped dark chocolate until smooth.
- Gently fold in fresh raspberries into the cooled ganache mixture and pour into the prepared crust.
- Refrigerate for at least two hours or until set. Slice and serve chilled.
