Description

A quick and flavorful recipe for honey mustard salmon and asparagus, perfect for a healthy weeknight dinner. This dish features succulent salmon fillets and tender asparagus roasted with a tangy honey mustard glaze.


Ingredients

  • 4 salmon fillets (approximately 6 oz each)
  • 1 bunch asparagus (around 1 lb), trimmed
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil, plus extra for asparagus
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and freshly cracked pepper, to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small mixing bowl, combine the honey, Dijon mustard, olive oil, soy sauce, garlic powder, and a pinch of salt and pepper. Whisk until smooth.
  3. Place salmon fillets in a shallow dish and pour half of the marinade over them. Let marinate for 10 minutes.
  4. Arrange trimmed asparagus on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  5. Remove salmon from marinade and place skin-side down on the baking sheet next to the asparagus.
  6. Drizzle the remaining marinade over the salmon fillets.
  7. Bake for 15 to 20 minutes, or until salmon flakes easily and asparagus is tender-crisp.
  8. Garnish with parsley, if desired. Serve with lemon wedges.

Notes

  • For even cooking, ensure salmon fillets are similar in thickness. Adjust baking time if necessary.
  • If asparagus stalks are very thick, consider cutting them in half lengthwise.
  • Discard any remaining marinade after coating the salmon.
