- 2 lbs boneless, skinless chicken breasts, cut into slider-sized portions
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup vegetable oil, for frying
- 1 (12-count) package Hawaiian sweet rolls or similar slider buns
- 12 slices Provolone, Swiss, or white cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 tablespoon apple cider vinegar
- 1/4 cup unsalted butter, melted
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder (for topping)
- 1 tablespoon poppy seeds or sesame seeds (optional)
- Thinly sliced red onion or pickles, for serving (optional)
Instructions
- In a medium bowl, combine 1/2 cup mayonnaise, 1/4 cup Dijon mustard, 2 tablespoons yellow mustard, 1/4 cup honey, 1 tablespoon apple cider vinegar, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and an optional dash of hot sauce. Whisk until smooth. Cover and refrigerate for at least 30 minutes.
- Cut chicken breasts into slider-sized portions. In a shallow dish, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another dish, beat eggs. In a third dish, place panko breadcrumbs. Dredge each chicken piece in flour, dip in egg, and coat with panko. Heat oil in a skillet over medium-high heat. Fry chicken for 4-6 minutes per side until golden brown. Remove and let rest for 5-10 minutes, then chop into bite-sized pieces.
- Transfer chicken to a bowl. Spoon 1/2 to 3/4 cup of the chilled honey mustard sauce over chicken and toss to coat. Reserve remaining sauce for serving.
- Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally and place the bottom in a baking dish. Arrange cheese on the bottom, spread the chicken mixture over cheese, and top with remaining cheese. Place the top half of the rolls back over.
- In a bowl, melt butter and stir in Worcestershire sauce and garlic powder. Brush this mixture over the tops of the buns and sprinkle with poppy seeds or sesame seeds if desired.
- Cover with foil and bake for 15 minutes. Remove foil and bake uncovered for another 5-10 minutes until golden brown. Let rest for 5 minutes, slice into sliders, and serve warm with reserved sauce and optional red onion or pickles.

- Adjust honey in the sauce to taste.
- For extra crunch, let the breaded chicken rest before frying.
