  • 2 lbs boneless, skinless chicken breasts, cut into slider-sized portions
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil, for frying
  • 1 (12-count) package Hawaiian sweet rolls or similar slider buns
  • 12 slices Provolone, Swiss, or white cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder (for topping)
  • 1 tablespoon poppy seeds or sesame seeds (optional)
  • Thinly sliced red onion or pickles, for serving (optional)

Instructions

  1. In a medium bowl, combine 1/2 cup mayonnaise, 1/4 cup Dijon mustard, 2 tablespoons yellow mustard, 1/4 cup honey, 1 tablespoon apple cider vinegar, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and an optional dash of hot sauce. Whisk until smooth. Cover and refrigerate for at least 30 minutes.
  2. Cut chicken breasts into slider-sized portions. In a shallow dish, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another dish, beat eggs. In a third dish, place panko breadcrumbs. Dredge each chicken piece in flour, dip in egg, and coat with panko. Heat oil in a skillet over medium-high heat. Fry chicken for 4-6 minutes per side until golden brown. Remove and let rest for 5-10 minutes, then chop into bite-sized pieces.
  3. Transfer chicken to a bowl. Spoon 1/2 to 3/4 cup of the chilled honey mustard sauce over chicken and toss to coat. Reserve remaining sauce for serving.
  4. Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally and place the bottom in a baking dish. Arrange cheese on the bottom, spread the chicken mixture over cheese, and top with remaining cheese. Place the top half of the rolls back over.
  5. In a bowl, melt butter and stir in Worcestershire sauce and garlic powder. Brush this mixture over the tops of the buns and sprinkle with poppy seeds or sesame seeds if desired.
  6. Cover with foil and bake for 15 minutes. Remove foil and bake uncovered for another 5-10 minutes until golden brown. Let rest for 5 minutes, slice into sliders, and serve warm with reserved sauce and optional red onion or pickles.
