- 1 lb lean ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- 2 cups low-sodium chicken broth
- 1 tbsp olive oil
Instructions
- Prepare all ingredients by dicing the onions and bell peppers and mincing the garlic.
- In a large pot over medium heat, add olive oil and then sauté onions until translucent. Add garlic and bell peppers; cook for another 2 minutes.
- Add ground turkey to the pot. Cook until browned, about 5-7 minutes.
- Stir in chili powder and cumin before adding kidney beans, black beans, and diced tomatoes with their juices.
- Pour in chicken broth to reach desired thickness; bring to a simmer.
- Reduce heat to low and let simmer uncovered for 30-45 minutes until thickened.
