  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 large carrots, sliced
  • 4 stalks celery, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 1 can (14.9 ounces) Guinness beer
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tablespoons flour (optional for thickening)
  • Fresh parsley, for garnish

Instructions

  1. Cut the beef into even cubes, slice the carrots, chop the celery, and dice the onion.
  2. In a large pot, heat the olive oil over medium high heat. Add the beef cubes in batches, searing until browned on all sides. Remove and set aside.
  3. In the same pot, add the onions, carrots, and celery. Sauté for about 5 minutes until they begin to soften. Add the garlic and cook for an additional minute.
  4. Stir in the tomato paste and cook for another minute until incorporated.
  5. Pour in the Guinness, scraping the bottom of the pot to release any flavorful bits. Bring to a simmer.
  6. Return the browned beef to the pot along with the beef broth, Worcestershire sauce, thyme, and bay leaves. Stir well to combine.
  7. Add salt and pepper to taste.
  8. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2 hours, stirring occasionally.
  9. (optional): If you desire a thicker stew, mix the flour with a bit of water to create a slurry. Stir it into the pot during the last 15-20 minutes of cooking.
  10. Taste and adjust seasoning as necessary before serving.
