- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 large carrots, sliced
- 4 stalks celery, chopped
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 4 cups beef broth
- 1 can (14.9 ounces) Guinness beer
- 1 tablespoon Worcestershire sauce
- 2 teaspoons thyme
- 2 bay leaves
- Salt and pepper, to taste
- 2 tablespoons flour (optional for thickening)
- Fresh parsley, for garnish
Instructions
- Cut the beef into even cubes, slice the carrots, chop the celery, and dice the onion.
- In a large pot, heat the olive oil over medium high heat. Add the beef cubes in batches, searing until browned on all sides. Remove and set aside.
- In the same pot, add the onions, carrots, and celery. Sauté for about 5 minutes until they begin to soften. Add the garlic and cook for an additional minute.
- Stir in the tomato paste and cook for another minute until incorporated.
- Pour in the Guinness, scraping the bottom of the pot to release any flavorful bits. Bring to a simmer.
- Return the browned beef to the pot along with the beef broth, Worcestershire sauce, thyme, and bay leaves. Stir well to combine.
- Add salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 2 hours, stirring occasionally.
- (optional): If you desire a thicker stew, mix the flour with a bit of water to create a slurry. Stir it into the pot during the last 15-20 minutes of cooking.
- Taste and adjust seasoning as necessary before serving.
