Ingredients

  • Ribeye or sirloin steak (or filet mignon)
  • Unsalted butter
  • Fresh garlic cloves
  • Heavy cream
  • Freshly grated Parmesan cheese
  • Salt
  • Pepper
  • Oil (for cooking)
  • Fresh herbs (optional, e.g. thyme or rosemary)

Instructions

  1. Take your steaks out of the refrigerator about 30 minutes before cooking to allow them to come to room temperature. Season generously with salt and pepper on both sides.
  2. In a large skillet, preferably cast iron, heat a tablespoon of oil over medium-high heat until it shimmers.
  3. Add the steak to the hot skillet and sear for about 3-4 minutes on each side for medium-rare, adjusting the time for your preferred doneness.
  4. In the last minute of cooking, add butter and minced garlic to the pan. Baste the steak with the melted garlic butter using a spoon.
  5. Once cooked, remove the steak from the skillet and let it rest on a cutting board for about 5-10 minutes.
  6. In the same skillet, lower the heat to medium. Add heavy cream and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. After resting, slice the steak against the grain. Drizzle the Parmesan cream sauce over the slices or serve it on the side for dipping.
