Ingredients

- 8 oz fusilli pasta
- 4 cups fresh kale, chopped
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 cup crumbled feta cheese
- ½ cup Kalamata olives, pitted and sliced
- ¼ medium red onion, thinly sliced
- ¼ cup extra virgin olive oil
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
- While pasta cools, massage chopped kale with olive oil in a large bowl until tender.
- Mix diced cherry tomatoes, cucumber, and red onion into the bowl with kale.
- Add cooled pasta along with crumbled feta and olives; toss gently to combine.
- Whisk together olive oil, lemon juice, oregano, salt, and pepper; drizzle over salad before serving.
