  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth or water
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano

  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • 1 cucumber, grated
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Pita bread for serving
  • Sliced tomatoes and lettuce for garnish

Instructions

  1. Place the boneless chicken breasts in the slow cooker.
  2. In a bowl, combine chicken broth, olive oil, lemon juice, oregano, garlic powder, onion powder, paprika, salt, black pepper, and red pepper flakes (if using).
  3. Pour the marinade over the chicken in the crockpot. Ensure the chicken is evenly coated.
  4. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, depending on your schedule.
  5. After the cooking time, check if the chicken is thoroughly cooked and tender. It should shred easily with a fork.
  6. While the chicken is cooking, prepare the tzatziki. In a bowl, combine the grated cucumber, Greek yogurt, dill, minced garlic, and some salt and pepper to taste.
  7. Remove the cooked chicken from the slow cooker and shred it using two forks. Return shredded chicken to the crockpot, mixing it with the juices.
  8. Before serving, warm the pita bread in the oven or on a skillet for a few minutes.
  9. Place a generous amount of shredded chicken into each pita.
  10. Top with tzatziki, sliced tomatoes, and lettuce.
