Easy Crockpot Cheesy Potatoes & Beef Kielbasa Dinner


Ingredients

  • 34 medium russet or Yukon Gold potatoes, diced
  • 14 oz high-quality smoked beef kielbasa, sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Prepare Ingredients: Dice potatoes into 1-inch cubes. Slice smoked beef kielbasa into ½-inch rounds.
  2. Make Sauce: In a large bowl, whisk cream of chicken soup with onion powder and garlic powder until smooth.
  3. Combine: Add diced potatoes to the soup mixture; stir until evenly coated.
  4. Layer in Slow Cooker: Lightly grease a 6-quart slow cooker. Spoon one-third of the potato mixture into the bottom. Layer with half of the sliced beef kielbasa, then half (1 cup) of the shredded sharp cheddar cheese.
  5. Continue Layers: Add another third of the potato mixture, the remaining beef kielbasa, and half (0.5 cup) of the remaining sharp cheddar cheese. Top with the final third of the potato mixture.
  6. Cook: Cover and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until potatoes are fork-tender.
  7. Melt Cheese Topping: Sprinkle the remaining 0.5 cup of shredded sharp cheddar cheese evenly over the top. Replace lid and cook for another 15-30 minutes, or until cheese is melted and bubbly.
  8. Rest & Serve: Let rest for 10-15 minutes before serving. Garnish with fresh parsley if desired.
