Easy Crockpot Cheesy Potatoes & Beef Kielbasa Dinner

- 3–4 medium russet or Yukon Gold potatoes, diced
- 14 oz high-quality smoked beef kielbasa, sliced
- 2 cups shredded sharp cheddar cheese
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- Prepare Ingredients: Dice potatoes into 1-inch cubes. Slice smoked beef kielbasa into ½-inch rounds.
- Make Sauce: In a large bowl, whisk cream of chicken soup with onion powder and garlic powder until smooth.
- Combine: Add diced potatoes to the soup mixture; stir until evenly coated.
- Layer in Slow Cooker: Lightly grease a 6-quart slow cooker. Spoon one-third of the potato mixture into the bottom. Layer with half of the sliced beef kielbasa, then half (1 cup) of the shredded sharp cheddar cheese.
- Continue Layers: Add another third of the potato mixture, the remaining beef kielbasa, and half (0.5 cup) of the remaining sharp cheddar cheese. Top with the final third of the potato mixture.
- Cook: Cover and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until potatoes are fork-tender.
- Melt Cheese Topping: Sprinkle the remaining 0.5 cup of shredded sharp cheddar cheese evenly over the top. Replace lid and cook for another 15-30 minutes, or until cheese is melted and bubbly.
- Rest & Serve: Let rest for 10-15 minutes before serving. Garnish with fresh parsley if desired.
