- 2 lbs Yukon Gold or red potatoes
- 8 oz feta cheese
- 4 fresh garlic cloves, minced
- 4 tbsp olive oil
- 2 sprigs fresh rosemary or thyme
- 2 tbsp fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut your potatoes into evenly sized pieces, about 1 to 1.5 inches.
- In a large bowl, toss the potatoes with olive oil, minced garlic, salt, pepper, and your choice of herbs.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for about 30-35 minutes, flipping them halfway through.
- During the last 15 minutes of roasting, place the block of feta in the center of the baking sheet and drizzle it with olive oil.
- Once the potatoes are golden brown and crispy and the feta is warm, remove them from the oven.
- Squeeze fresh lemon juice over the top, and serve hot.
