Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 8 oz feta cheese
  • 4 fresh garlic cloves, minced
  • 4 tbsp olive oil
  • 2 sprigs fresh rosemary or thyme
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut your potatoes into evenly sized pieces, about 1 to 1.5 inches.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, salt, pepper, and your choice of herbs.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 30-35 minutes, flipping them halfway through.
  6. During the last 15 minutes of roasting, place the block of feta in the center of the baking sheet and drizzle it with olive oil.
  7. Once the potatoes are golden brown and crispy and the feta is warm, remove them from the oven.
  8. Squeeze fresh lemon juice over the top, and serve hot.
