Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, minced

  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups low-sodium chicken broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 2 (4-ounce) cans diced green chiles, undrained
  • 3 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic, cumin, chili powder, oregano, and cayenne pepper (if using). Cook for 1 minute more until fragrant.
  3. Pour in chicken broth, cannellini beans, and diced green chiles. Bring to a simmer.
  4. Stir in shredded chicken and cook for 5 minutes to heat through.
  5. Reduce heat to low. Add softened cream cheese, stirring until it’s melted and the chili is creamy.
  6. Stir in fresh cilantro. Season with salt and pepper to taste.
