Description

Delicious Creamy Marry Me Chicken Ramen Recipe You’ll Love!

Ingredients

Scale
  • 4 chicken thighs (or chicken breasts)
  • 200g fresh ramen noodles (or dried/instant noodles)
  • 1 cup heavy cream (or half-and-half/coconut cream)
  • 4 cups chicken broth (homemade or store-bought)
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 cups fresh spinach (or kale/bok choy/frozen spinach)
  • 2 green onions, chopped (or chives/shallots)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the chicken: Start by seasoning the chicken thighs with salt and pepper. In a large skillet over medium heat, add a drizzle of oil and sear the chicken thighs for about 5-7 minutes on each side until they are golden brown. Remove the chicken from the skillet and set it aside.
  2. Sauté aromatics: In the same skillet, add a bit more oil if necessary, and toss in the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn them.
  3. Add broth: Pour in the chicken broth and bring it to a simmer. Use a wooden spoon to scrape any browned bits from the bottom of the skillet for added flavor.
  4. Incorporate cream: Stir in the heavy cream, mixing well until the broth is creamy and smooth.
  5. Return chicken: Add the seared chicken thighs back into the skillet, cover, and let it simmer for about 15 minutes.
  6. Cook noodles: While the chicken simmers, cook the ramen noodles according to the package instructions. Drain and set aside.
  7. Add veggies: After 15 minutes, add the fresh spinach to the skillet, stirring until wilted.
  8. Combine: Once everything is cooked, remove the chicken from the skillet and slice it into bite-sized pieces. Add the cooked ramen noodles to the creamy broth, stirring to combine.
  9. Serve: Place the noodles in bowls, top with the sliced chicken, and garnish with chopped green onions and a sprinkle of red pepper flakes.
