Description

Creamy Coconut Peanut Noodles is a delicious and satisfying dish that combines the richness of coconut milk and peanut butter with fresh vegetables and noodles.


Ingredients

  • 8 oz rice noodles (or your choice of noodles)
  • 1 cup coconut milk
  • ½ cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snap peas or snow peas
  • ¼ cup chopped peanuts (for garnish)
  • Fresh cilantro or green onions (for garnish)
  • Red pepper flakes (optional, for heat)

Instructions

  1. Bring a pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a large saucepan over medium heat, combine the coconut milk, peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and minced garlic. Stir continuously until the mixture is smooth and well combined.
  3. Once the sauce is ready, add sliced bell peppers and snap peas to the saucepan. Cook for about 3-4 minutes until the vegetables are slightly tender yet still crisp.
  4. Add the cooked noodles to the saucepan. Toss everything together until the noodles are thoroughly coated in the creamy sauce.
  5. Taste your noodles and add salt, pepper, or additional lime juice as per your preference.
  6. Once everything is heated through and well mixed, remove the pan from heat.
  7. Serve the noodles in bowls, topped with chopped peanuts and fresh cilantro or green onions. If you like some heat, sprinkle red pepper flakes on top.
