- 1 pound Italian sausage
- 1 pound potatoes, peeled and diced
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the milk, heavy cream, thyme, and rosemary. Heat through but do not boil.
- Season with salt and pepper to taste.
- Ladle the cozy sausage potato soup into bowls and garnish with fresh parsley.
