Ingredients

  • 1 pound Italian sausage
  • 1 pound potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, cook the Italian sausage over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the milk, heavy cream, thyme, and rosemary. Heat through but do not boil.
  6. Season with salt and pepper to taste.
