  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup nutritional yeast
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Stir in the minced garlic, diced carrots, and diced celery. Cook for another 5-7 minutes, until the vegetables start to soften.
  3. Add the chopped potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until all vegetables are tender.
  4. Stir in the full-fat coconut milk, nutritional yeast, and dried thyme. Season with salt and black pepper to taste.
  5. Using an immersion blender, carefully blend the soup until it reaches your desired creamy consistency. Alternatively, transfer batches of the soup to a regular blender and blend until smooth.
  6. Return the creamy vegan vegetable soup to the pot, if using a regular blender, and heat through.
