Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (4 ounce) can chopped green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the crushed tomatoes, kidney beans, black beans, pinto beans, and chopped green chilies.
  4. Add the chili powder, cumin, salt, and pepper. Stir well to combine.
  5. Bring the chili to a simmer, then reduce the heat to low, cover, and let it cook for at least 30 minutes, or up to 2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
  6. Serve your chili for cozy nights hot, with your favorite toppings.

Notes

  • For a spicier chili, add a pinch of cayenne pepper.
  • If you don’t have ground beef, you can substitute ground turkey or chicken.
