Description

These Chewy French Toast Cookies combine the warm, buttery essence of traditional French toast with the chewy texture of freshly baked cookies.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup softened unsalted butter
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • ¼ cup milk

Instructions

  1. Preheat the oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Mix the dry ingredients: In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, and a pinch of salt. Set this aside.
  3. Cream the butter and sugars: In a large mixing bowl, beat together 1 cup of softened unsalted butter, ¾ cup of brown sugar, and ¼ cup of granulated sugar until it’s light and fluffy. This usually takes about 2-3 minutes.
  4. Add the eggs and vanilla: Beat in 2 large eggs one at a time, followed by 1 tablespoon of vanilla extract. Make sure everything is well combined.
  5. Combine wet and dry ingredients: Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix!
  6. Incorporate the milk: Stir in ¼ cup of milk until the dough comes together. It should be slightly sticky but manageable.
  7. Scoop the dough: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers remain soft. They will continue to firm up as they cool.
  9. Cool and enjoy: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
